The holy Quran briefly mentions about slaughtering:
وَلاَ تَأْكُلُواْ مِمَّا لَمْ يُذْكَرِ اسْمُ اللّهِ عَلَيْهِ الآية [الأنعام : 121]
Also it mentions the unlawfulness of animals killed by strangulation, or killed by a blow, or by a fall, or by goring, or that is eaten by a beast, which finally implies Islamic slaughterer. The complete details of slaughter are mentioned in hadith and fiqh books.
